Pairing Perfection: Elevating the Experience

To elevate your experience with our Hawke’s Bay Syrah, we invite you to indulge in a culinary pairing that complements its distinct flavors and enhances its enchanting allure. Enter the realm of gastronomic bliss as you savor the following pairing:

Seared Duck Breast with Cherry Reduction

Ingredients:

  • 2 duck breasts
  • Salt and freshly ground black pepper
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup red wine
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Fresh rosemary sprigs for garnish

Instructions:

  1. Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season generously with salt and pepper.
  2. Heat a skillet over medium-high heat. Place the duck breasts skin-side down and cook for 5-6 minutes until the skin is golden and crisp. Flip and cook for an additional 3-4 minutes for medium-rare, or until desired doneness. Remove from the skillet and let rest.
  3. In the same skillet, add the cherries, red wine, balsamic vinegar, and honey. Cook over medium heat, stirring occasionally, until the cherries are soft and the sauce has thickened, about 8-10 minutes.
  4. Slice the duck breasts and serve with the cherry reduction sauce. Garnish with fresh rosemary sprigs for an aromatic touch.

A Culinary Symphony: The Perfect Harmony

The succulent richness of the seared duck breast harmonises exquisitely with the luscious fruitiness and subtle earthiness of our Hawke’s Bay Syrah. The sweet-tart notes of the cherry reduction accentuate the wine’s inherent complexity, creating a symphony of flavors that dance gracefully on the palate. Each bite is a revelation, a testament to the unparalleled synergy between food and wine.
